kiawah grille
last night, my bro and i designed our menus for this trip to kiawah. we even put together an actual menu using microsoft word's template.
night one:
bruschetta appetizer with cannellini and walnuts
seafood risotto with clams, calamari, and shrimp
broccoli rabe with red pepper
chocolate biscotti with fresh strawberry granita
night two:
tortilla chips with fresh mango salsa
grilled catfish tacos with plum tomatoes and avocado
baby greens salad with cilantro vinaigrette
flourless orange chocolate cake with fresh vanilla whipped cream
so, i've never made biscotti, a granita, or a flourless cake (with 18 ounces of good bittersweet chocolate!) before, and thus, i'm both excited and nervous.
i have also decided to make a batch of gold rush brownies; my grandma chica used to make them for every family get-together. the only ingredients are semi-sweet chocolate chips, chopped walnuts, graham cracker crumbs, and sweetened condensed milk.
can't wait.

I have a question of mundane interest. Have you checked the availability of some of these ingredients on Kiawah? Just curious, but I've run into some cooking limitations at the homefront. I know Kiawah is ritzy, right(?), or I know tennis resorts exists there, so all should be fine. But the South is...
what happened to the cumin rice and portabellos?
cht, we're actually going to take a trip into charleston to do our shopping. we're also bringing some things with us (fresh bread, chocolate, etc.). good point, however!
kb, i've been a baking fool lately and my brother has been cookin' up a storm. we decided that we'd enjoy taking separate courses on the same night, rather than being responsible for an entire meal, start to finish. the app/entree choices were his; the desserts, mine.
