the market report
i made about six dinners on less than five bucks tonight. why didn't i document it in photos? GRRR. frustrated with self.
went to the greenmarket earlier this morning and picked out some produce: sweet potato, apples, onion, peppers (i know this is sounding like a rather autumnal meal, and how ironic on the summer solstice, but go with me), zucchini, summer squash. brought 'em home and chopped up all into evenly-sized pieces. sauteed the first four in my favorite pan for 5 minutes with a couple o' glugs of evoo.
meanwhile, i was warming up cinnamon, turmeric, madras curry powder, garlic, and sea salt in some evoo in another saucepan until it smelled all yummy-like. poured the spice oil over the fruit/veggie combo and added a can of garbanzo beans that had been rinsed and drained. also added the zucchini and squash. gave it a stir and let it simmer, covered, for a half hour. served it over some baby spinach i needed to use up from the fridge.
it really made a big ol' large amount. six meals, no problem, especially when served on the spinach. would also be delish tucked inside one of trader joe's whole wheat pitas (four for 99 cents!). i think the farmer's market is the way to go.
oh, and a peach sprinkled with cinnamon with a cup of trader joe's decaf chocolate tea is my dessert and it might just continue to be so for the rest of the summer.
